Broccoli and Stilton Soup

CJUK Chef John, shares his secret to a great Broccoli and Stilton Soup…soup

  • 1 head broccoli
  • 1 medium sized onion
  • 125gr stilton cheese
  • 1 Veg stock
  • 2 tablespoons plain flour
  • Crème Fraiche
  • Chopped chives (to garnish)
  • Olive oil
  • Seasoning

Here goes…

  1. Roughly chop the broccoli and the onion
  2. Heat the pan with a splash of olive oil
  3. Sweat off the vegetables
  4. Bind together with flour
  5. Gradually add the veg stock, stirring until consistency is met
  6. Crumble in the stilton
  7. Season to taste, and simmer for 10 to 15 minutes or until broccoli is tender
  8. Blend until smooth
  9. Serve with a spoon of crème fraiche and a sprinkle of chopped chives
