How long have you been in the hospitality industry for?
I have been in the catering industry since 1986.
How did you become a Chef?
I was inspired by my uncle who used to own Italian restaurants in Waterloo, London. My first job was working in his restaurant “El Papagallo”.
What is your favourite thing about working in the industry?
I like working as a Chef as it’s a field where I can be creative in the kitchen, to me its art!
What’s the strangest thing you have experienced?
Nothing is strange in this industry but every day we discover something new and every day is a learning day.
Have you ever cooked for any celebrities?
I used to work in the West End in a Convent Garden restaurant “Le Palais Du Jardin” where I cooked for many celebrities. I also worked in “Mamounia lounge” which was well known to international footballers.

What is the best job you’ve ever had?
My favourite job was as Head Chef in “Mamounia Lounge” where I got awarded Best Bar Restaurant in London 2008/2009. This was a proud moment for me.
Best thing about your role as an Interim Chef?
I currently work as Chef Manager in Education, I enjoy this role and find it challenging when it comes to nutrition, budget and looking after 800 students and 150 staff. I take jobs with CJUK when I have free evenings and weekends and want some extra shifts in and around London.
Can you sum up why you work with CJUK?
I enjoy working for CJUK, we work well as a team and I always manage to build a good relationship with the staff, whether they’re senior and have been there for years or whether they have only just started.
