How long have you been a Chef for?
Over 35 years!
Why did you become a Chef?
My mum was a terrible cook so I had to learn…
What is your favourite dish to cook and why?
Long cooks e.g. lamb shanks, they take too long to do at home
What’s the strangest thing you’ve ever been asked to cook?
“Rare to well-done steak” for an American customer. They wanted it burnt on the outside but raw in the middle…
Have you ever cooked for a celebrity?
Yes, lots! Steve Nicks from Fleetwood Mac was one
What was your first job?
A pub in Chester where I started as a Commis Chef from college
What is the best job you have ever had?
The people I worked with in Hertfordshire for seven years were nice, honest people
What is the best thing about being a Chef?
The variety of people and environments, also everyone is a team it’s not just one person. It takes a lot of people for the operation to run smoothly.
What is your guilty pleasure?
Definitely desserts, I have a very sweet tooth!
