Congratulations to CJUK Chef, Russell, who has been won our ‘Chef of the Month’ Award for September 2018!
We asked him a few questions about his Chef career so far…
How long have you been a Chef for?
Just passed my 30 year anniversary! September 1998 was my first full time job where I started as a Commis Chef at Aberystwyth University.
Why did you become a Chef?
I did some part time work at school and settled into it. I found out at college that I had a knack for it so I went to study it at college!
What is your favourite dish to cook and why?
Indian and Indonesian food. I like spices and different food.
What’s the strangest thing you’ve ever been asked to cook?
I worked on QE2 and they give special orders where they pay a certain amount and can order whatever they want.
Three people on one table ordered a whole lobe of foie gras en croute… 1Kg each!
Have you ever cooked for a celebrity?
In my last job I cooked for many famous people including Prince Charles and Barack Obama. I also cooked when I was at the G10 summit in Wales 5 years ago!
What is the best job you have ever had?
InterContinental in South Korea.
What is the best thing about being a Chef?
You get to meet loads of crazy people and travel as far and wide as you want!
What is your guilty pleasure?
Cake! I once worked with CJUK in Evesham and the pastry Chef there was phenomenal. She made a pistachio and polenta cake which was absolutely amazing!
