How long have you worked in the industry?
23 years!
How did you get into hospitality?
I started out working in an office but hated sitting at a desk, I always had interest in cooking so decided to follow that instead.
My first hospitality job was as kp/commis in a little country pub. I found it quite enjoyable so phoned round all the big hotels I could find in yellow pages (if anyone remembers that) and ended up going to work at the Metropole in Birmingham for 5 years.
What is your favourite thing about working in this industry?
There are a few! The top one is definitely the buzz of a busy service and seeing customers leaving happy. Watching a dish you helped create going off the pass just puts a smile on your face. Also being able to teach people is great feeling.
What’s an unusual thing you’ve experienced?
We were once doing a function out in the Hotel grounds when Whitney Houston arrived by helicopter, sang, then left!
What is the best job you have ever had?
I’d have to say Luton Hoo Hotel and The Grove Hotel in Watford, they were the best for me.
